RECIPE – Greek Salad with Souvlaki Marinated Steak

Not sure what to cook this weekend? This delightful greek summer salad will hit the spot! It is not only keto friendly, but also gluten, dairy, sugar, and grain free! You can even sub the steak for chickpeas if you want to make a vegan option!

Greek Salad with Souvlaki Marinated Steak
(Dairy Free, Gluten Free, Grain Free, Keto Friendly)

Servings: 4

Ingredients:

Souvlaki Steak:

1 lb of lean grass-fed organic steak

Marinade:
1/4 cup olive oil
2 tablespoons lemon juice
2 cloves garlic, minced
1 teaspoon dried oregano
1/2 teaspoon salt

Salad:

1 head romaine lettuce- rinsed, dried and chopped

1 red onion, thinly sliced

¼ cup pitted black olives

1 red bell pepper, chopped

2 large Roma tomatoes, chopped

1 cucumber, sliced

Salad Dressing:

4 tablespoons olive oil

1 teaspoon dried oregano

1/2 lemon, juiced

1 Tbsp Apple Cider Vinegar (unpasteurized, with mother)

Directions:

  1. In a glass bowl, mix the marinade ingredients. Add the steak and let sit for 30-60 mins.
  2. In a large salad bowl, combine the romaine lettuce, onion, olives, bell peppers, tomatoes, and cucumber.
  3. In another bowl, whisk together the olive oil, oregano, lemon juice, apple cider vinegar and black pepper.
  4. Once the steak is done marinating, saute in a pan on low-medium heat until cooked throughout (5-7 mins).
  5. Pour dressing over salad, toss, add steak and serve.
