Do you wish you could eat healthier but have trouble finding the time or motivation to cook healthy meals?
I’m definitely a big advocate of meal prep ahead of time to support this, however sometimes life throws us curveballs that get us out of routine or we are traveling and don’t have access to our own kitchen!
So, I’ve prepared a list of 4 easy dinner ideas using items you can pick up at the grocery store (or online) and assemble in under 10 minutes without a stove or oven! All of the meal ideas are gluten-free, dairy-free, refined sugar-free and a few are even keto-friendly!
- Mixed Greens Balsamic Chicken Salad:
Organic Mixed Greens (pre-washed)
Balsamic Vinegar as dressing (add olive oil if you have it on hand!)
- Beet Salad:
Spiralized Zucchini and Beets (in clamshell)
Edamame (Buy frozen and shelled)
Optional add-on: Sliced Green Apples
Hilary’s Beet Vinaigrette Dressing:
- Spinach Power Salad
Organic Spinach (pre-washed)
Roasted Chicken or Chickpeas (BPA-free can)
Hilary’s Chili Lime Vinaigrette:
- Tuna Avocado Lettuce Wrap
Canned Tuna (Skip Jack or light wild Tuna preferred)
Organic Romaine Lettuce
Optional: Lime Juice or Salsa
Earth’s Balance Soy-Free Mayo
